No Option for UK-Mac Keyboard, meaning symbols section is incorrect

No Option for UK-Mac Keyboard in the settings (and presumably US-Mac?), meaning that the symbols section is incorrect.
For example, to type the pound symbol ( # ) it should be OPTION + RIGHT-OPTION.
