When I’m doing the excercises which show the hands on the keyboard, am I suppopsed to look at the finger positions there? That doesn’t seem that different than looking down at the physical keyboard.

You are correct it is just the same though. But the reason why you need to follow what is on the screen is for you to familiarize on how and what’s the proper way of typing when using our fingers. Once you’ll get to master the placement of the letters on the keyboard then it will be more easier for you not to look at the keyboard on the screen.
Touch typing is all about the idea that each finger has its own area on the keyboard . Thanks to that fact you can type without looking at the keys. Practice regularly and your fingers will learn their location on the keyboard through muscle memory.
